JPG is the format that every form, email client and marketplace accepts, which is the usual reason to turn Illustrator artwork into one. It cannot hold transparency and adds faint smudging around hard edges, so for logos on coloured backgrounds AI to PNG is cleaner.
JPG fills any empty area with a solid colour. The PDF inside a modern .ai is rendered as a white page, so you get white unless you pick a different background colour in the options.
A .ai saved without PDF compatibility needs Illustrator itself to draw. You will get a message asking for a re-save with "Create PDF Compatible File" ticked, or for a PDF export, rather than a broken image.
